It's usually pretty tasty, here's what I used to prepare the chicken before baking it...
- Honey
- Chinese rice wine
- Smoked garlic and chilli
- One fresh chilli
- Some mixed dried herbs
- Ginger
- Garlic
- Spring onion
- Mixed herbs
- Red peppercorns
- Corriander seeds
- Soyasauce
- Sesame oil
I guess there are no proportions of what to put in, just don't put in too much honey and/or soyasauce cause it will be either too salty or burn when you bake it. For 4 chicken legs it should take about 35mins in the oven at ~200degree centigrade. I did how ever marinate the chicken over night, and when cooking, I turned the chicken around abit.
I just served it up with potatoes, I guess some plain white rice would also be good. The chicken came out really juicy and not dry at all. The skin probably could have done with a few mins under the grill to crisp up.
I had some chicken left over, so it will be a dijon mustard, salad, chicken and a bread!!! for breakfast/lunch tomorrow.
