I've recently been involved taking a piece of software and helping in modifying a piece of pretty complex piece of software to support African Universities and academics (via the http://www.irishafricanpartnership.ie/ project. The goals are defined on their website. It's not exactly a glamourous project but it has lots of good will thrown in. I'm thinking they need some more help with building their community to bring the African academics up to the same level and speed as other countries that are better funded.

Though I'm not directly involved, I'd like to help more if I had more time or even suggest some ideas that maybe useful to them.
